Healthy Delicious Fish Tacos Recipe

This fish tacos recipe includes lots of delicious, healthy, fresh vegetables. It takes a little time to chop up all the veggies for the salsa, but other than that, this dish is easy and quick to make.

Fish Taco Ingredients

Cod Filets (or other fish of your choice). I use Cod because it is mild and makes nice big, beautiful flakes; but Talapia also works well.

– Juice of One Lime
– 1 to 2 tablespoons of Olive Oil
– Flour Tortillas
– Cooked Corn Kernels
– Chopped Fresh Lettuce
– Pepper Avocado Salsa

First I make the salsa.

Pepper Avocado Salsa Ingredients

– 1/4 cup finely chopped  Onion
– 1/4 cup finely chopped Orange Bell Pepper
– 1/4 cup finely chopped Yellow Bell Pepper
– 1 finely chopped Tomato
– 1 finely chopped Avocado (on the less ripe side are easier to chop)
– 1/4 cup finely chopped Cilantro
– Juice of 1 Lime

fish taco recipeYou may want to increase the onion to 1/2 cup if just for adults. If your kids are sensitive to onion, manage to sneak in just a little finely chopped size! After chopping all the ingredients, mix together and add some lime juice and a dash of salt. Put aside to let the flavors come together.

I use this homemade pepper avocado salsa on the fish tacos, and I also use the leftovers to dip my corn tortilla chips, in which I serve on the side of the tacos.

I marinate my filets in the lime juice and olive oil for about 5 minutes (after flipping to coat). Then I just sautee them for about 3 minutes on each side till the fish is opaque and can be easily flaked. At the same time I cook up some frozen corn kernels and chop some fresh lettuce. Then I warm my flour tortillas in a skillet with a little butter to brown them lightly. It takes time to do this for each tortilla but it makes them so much yummier!  Then just assemble a bit of fish, corn, and salsa in each tortilla. Voila! You have just made a delicious healthy fish tacos recipe! Serve with corn tortillas, left over salsa, and healthy homemade margaritas!
